Dear Friends

As you know ,organizing the end of the year is not easy…but the LI MING ASSOCIATION remain active and healthy.

Small problems exist in all domains;even in our association and others.But we are focused and committed to our mandate :meaning to serve and please all the members.

For our All Saints Mass in Chinatown organized by Bernadette Wan ,Harold
Siew,Father Morin and to everybody who helped us for that day :Thanks a lot.
This year again we are welcoming Santa Claus at our Christmas Kids Party on the 10TH of December but at a different place .

As last year,we are hoping to meet you all at our New Year’s Eve party at the Lotte Furama restaurant .Tickets are already available with our committee members .

Dr Davies Ng Cheng Hin.


There’s no doubt that our dear departed friend was one of the most liked
person in our community judging by the constant flow of people who came
during the two days’ wake and the overflowing crowd at the funeral.

The testimony came with the touching eulogy his nephew, Andrew Lee gave and
the most moving one André Lan delivered so eloquently, which brought tears
to everyone.

Yet, he lived a very simple life caring for his family.His wife, Lise and
him were devoted parents of: Patrick, Sandrine and Jason. I’ll never forget
the night of LiMing 15th anniversary party when their 3 children, all
(black-belt) were to give an exhibition, he hardly ate dinner, while making
sure that the three would be ready and also his camera so as he wouldn’t
miss any of their moves.

For his patients, he arduously and relentlessly cared for them and the wordmust have got around of his devotion and dedication, which made his
practice ever increasingly growing. It wasn’t for the money as we all know
of doctors’ plight of “fees capping”, but he just couldn’t refuse anybody
who needed care.

One would have thought that being in the medical field, he should have been
more aware of his predicament at an earlier stage, my humble conclusion is
that he worked so hard before taking that long awaited vacation back home
just after 35 years and trying to catch up upon his return had him believe that
it was just fatigue but found out too late what it really was. According to
his own assessment, he confided to me when I saw him Sept.10th that in the
worst scenario he’d have 3 months left but God abruptly ended his
sufferings, which must have been intense at that stage.

To everyone of his family,relatives and friends,it all seemed like a bad
dream but unfortunately it was not and the impact of his death is slowly sinking in.

St Joachim Church in Pointe-Claire was packed for a memorial masscelebrated on Oct. 29, 2005. Even Fr Pierre Labossiere was impressed by the
request of the organizers ( a group of ten friends) for such an elaborate
mass, complete with organ music and hymns. The celebrant said that when we
are gathered in the name of God, He must be there, hinting so was Davies.

After, the whole crowd gathered at Ecclestone Chalet in Kirkland for
refreshments. Had it been a normal gathering during his lifetime, Davies
would have been there enjoying the treats; he could very well have been
there in spirit!

An aspect of Mauritian culture is the practice of riddling(or sirandanes) .They were first made by Baissac in the 19th century.Some of them appear to bear the marks of slavery.

GATEAUX DE PATATES DOUCES(Recette :Ecole Hotelière de l’Ile Maurice)


INGREDIENTS:
Patates douces 500 g
Jaunes d’oeufs 4
Sucre 100g
Vanille 1 gousse
Jus de limon 10 ml
Rhum 25 ml
Blancs d’oeuf 4
PREPARATION :
1.Eplucher,puis couper les patates en morceaux.Les raper et préserver et réserver ( le produit rapé doit avoir plus ou moins la consistance de carottes rapées).
2.Etendre la patate rapée sur une plaque à patisserie et faire sécher au soleil (ou au four ;+/- 20 min à 80 degrés) puis Réserver.
3.Bien travailler les jaunes d’œufs avec le sucre et la vanille,puis mélanger à la patate rapée.
4.Ajouter le jus de limon le rhum,et les incorporer les blancs d’œufs battus en neige.
5.Bien mélanger et faire cuire au four 35 à 40 min à 180 degrés C.
